Recipe #15: Cheddar cheese crackers
Between 2007 and now I have tucked away six different recipes for cheese crackers in the “GOTTA MAKE THIS” folder in my computer’s bookmarks. How many have I made? Zero. I always seem to forgot about these cracker recipes until I stumble on another one. Rather than go to the one I’d previously bookmarked, I just add to the pile. It’s far less work that way.
See that red cayenne? Just a wee bit of that stuff give these crackers the perfect amount of kick.
Cheese choices. If you were to ever make cheese crackers, you’d better not resort to the cheap stuff. Cheese is the headliner, so investing in the really good cheese is of utmost importance. I used a sharp cheddar, as was suggested. Gruyère, my favorite cheese on planet Earth, would also be delicious. Not all cheeses would work, so don’t think you’re smart and fancy trying to through brie up in these crackers. Bad choice.

Mt. Crumble.
The dough should have been sticking together at this point. I used the stand mixer, but I think the walnuts are the culprits. The recipe described the walnuts as needing to be chopped “medium fine.” I think I retired from that step a little prematurely. Those walnuts were not medium fine, and it didn’t seem like a detrimental thing at the time.
Yes, I rolled the logs of cracker dough up in the parchment paper like this. It seemed like the easiest and most efficient way.

Were the walnuts chopped just a little more, slicing the frozen cracker dough would have been easier. Around half of the dough made it through the slicing process, and the other crumbly half was smushed together by hand. Both means of shaping turned out perfectly fine, but it would have saved a great deal of my time if I could have just sliced all of them.
They do look pretty lame heading into the oven, but once they’re in there and start to make your house like a Cheez-Its factory, it’s clear that something really good is happening. I was relieved to pull those golden brown-edged cheesy treats out of the oven.
Like a lot of his toddler counterparts, my little dude loves cheese crackers. I was so eager to give him these with dinner tonight, because I knew every single thing that went into making them! (versus their boxed-cracker counterparts) He loves spicy food, so I just knew his 2-year-old palette would appreciate the addition of cayenne. The first batch ended up being ready after we ate dinner, and once I brought him some crackers the little dude handed them back to me and asked for more green beans!!! No lie. He ate a lot of green beans tonight. I am definitely not complaining, yay veggies! It figures that would happen. I, on the other hand, am indulging in too many of these crackers as I sit on the couch, catch up on some DVR-ed television and tell you about how I made them. Having the crackers in my mouth as I describe them is good for my writing.
It’s written in the recipe to enjoy it with a nice glass of wine. Consider it done!

Now happily living in Michigan with my family, I miss the days when I could stand in line at the bakery in the morning, or grab a loaf of bread for dinner at a friend’s house. Miles and miles removed, I sometimes even find myself dreaming of sweet fruit galletes or a simple brioche. Seeing how I wake up bummed, I’m bound and determined to make every single thing, page 1 to 214, but not necessarily in that order.
